Caprese Salad


I found a basket of mixed cherry tomatoes at Whole Foods.  I have been craving tomato salad lately so I picked up a basket.  This salad is usually made with fresh mozzarella but I had some fresh feta at home already so I decided to use that as well.  I also used some blueberry balsamic we picked up at the Stillwater Olive Oil Company instead of the standard balsamic but whatever you have on hand works!  This salad is super simple and is an excellent meal on its own, but I had it as a side to the sirloin steak my husband grilled for us.

Caprese Salad

1 basket of cherry tomatoes (I used mixed tomatoes)
half a ball of fresh mozzarella or 1/2 a container of feta
fresh basil, chopped
drizzle of balsamic dressing
drizzle of olive oil
salt and pepper to taste

Mix all of the ingredients together in a bowl. If you have time you can half the tomatoes, put them in a strainer that is positioned over a bowl, sprinkle with salt and let them release some of their water. (I did not have time to do this when I made the salad so it was a bit watery)
